Position Summary:

The Baker is an experienced chef in charge of the production of all the breads, pastries,
doughs and a variety of other sweet & savoury items that are prepared in
the kitchen. Your skill in baking high quality treats should be matched by your
creativity to develop new amazing tastes and recipes. As well as the
consistency of producing a great quality product

The Goal of a Lanzerac Baker:

reproach.

Knowledge and Abilities:

Proven experience as a baker, pastry chef or relevant role

Great attention to detail and creativity

Organizing and leadership skills

Willingness to replenish professional knowledge

In depth knowledge of sanitation principles, food preparation and baking
techniques and nutrition

Working knowledge of baking with ingredient limitations (pastries that are gluten free,
sugarless etc.)

Key Duties and Responsibilities:

Prepare a wide variety of goods such as bread, buns, doughs, savoury
& sweet pastries, pie, cake & specially products such as gluten free etc.
following traditional and modern recipes

Create new and exciting items for the different outlets, working on
improving recipes and standards.

Decorate pastries using different icings, toppings etc. to ensure
the presentation will be beautiful and exciting

Monitor stocks for baking ingredients such as flour, sugar etc. and
make appropriate orders within budget

Check quality of material and condition of equipment and devices
used for cooking

Guide and motivate baking assistants to work more efficiently

Oversee that a high level of cleanliness is maintained, working with
the Night cleaning to supervise that the work is done

Make any room service order that comes in during the night, insuring
it is done to a high level of quality.

Provide handovers and work with outlets chefs to ensure all there
daily baking needs are meet before leaving

Identify staffing needs and help recruit and train personnel

Maintain a lean and orderly cooking station and adhere to health and
safety standard
